A waitlist feature will allow me see how much demand there is for a product even after it's sold out. This will help a lot to determine how much to buy when restocking and will help me project demand for the next quarter.

Hi you can do this with back in stock reminder now.
when you mark a product as sold out, reminder is automatically sent to customers one it is not marked as sold out. (customer needs to login to use this feature)

That feature could be also used as a crowdfunding feature, when collecting inquiries and FUNDS for upcoming products you plan to build. Like Kickstarter for products on take.app!
