there are services or products where the profit its low, and the fees from stripe makes almost unprofitable to sell that product, so would be nice to have a way to make certain payment methods unavailable for some products.

Consider a feature which allows you to list your own custom delivery locations and their prices unlike the postcode option, one that allows to the customer to see a list of places and choose from it. The distance doesn’t work for us because we have a pre agreed cost for certain locations.
